Top 10 Summer Cocktails: No 5 Mojito

We reach halfway in our summer cocktails series. As the recent sunshine prompted us all to enjoy some cocktails, we escaped once more into our gardens for BBQ’s, and generally some sense of ‘normal’ returning. Joseph Miller, top Mixologist at Blackfriars in Newcastle, and voted second best in the world by Brockmans Gin, has been revealing his Top 10 cocktails for this summer in readiness for the Great Northern Food and Drink Festival.

“These are the top most popular cocktails which we will be serving for the summer, as well as an extensive menu, but these epitomise summer in a glass,” explains Joseph.

5. MOJITO

A classic on every menu, this is a great cocktail to make and drink.

50ml white rum (spiced and dark rum can work too)
Mint leaves
Lime wedges
Sugar syrup
Crushed ice

Mix the rum with the mint leaves and then the remainder ingredients. You can lengthen the drink with soda water, and garnish with a mint sprig. There are many variations of the Mojito, suited to people’s taste preferences. I’ll be adding Blueberry and Amaretto Mojito to my signature menu for the summer.


The Great Northern Food & Drink Festival takes place at Scampston Hall near Malton, North Yorkshire on 28th, 29th and 30th August.

There will be over 200 vendors and 20,000 visitors expected during the course of the three days.
