Certain bottles set the benchmark in the brave frontier of natural wine, and this is one of them. Etienne Seignovert’s En Attendant La Nuit 2021 is a powerhouse Burgundy with layers of flavour that demand attention.
Made by a winemaker who is quietly reshaping the landscape of natural wines from his family farm. After honing his craft at Domaine Gouffier in Burgundy, Seignovert returned home with a deep commitment to polyculture and agroforestry. His land is lush, bordered by trees and hedges that foster a healthy ecosystem and support impeccable fruit. That dedication to sustainable, almost symbiotic farming is clearly translated into the bottle.
The 2021 vintage doesn’t disappoint. It’s one for those who value wines with freshness, vitality, and an edge of electricity. The fruit here is dark, as much blue as black, yet the wine remains incredibly light on its feet—a balancing act Seignovert seems to have mastered. It’s textured, with silky tannins already showing a soft, velvety touch that will only become more refined with time. But good luck waiting; it’s irresistible now.
